Green Tomato Chutney

Ingredients:

2 ½ Lbs. Green tomatoes, small and diced

1 C Golden raisins

1 C Onion, small and diced

1 ½  C Brown sugar, firmly packed

3 -5 ea. Cloves garlic, minced

1 tsp. Salt

1 ¼ C  Cider vinegar

1 Tbsp. Pickling Spices (cinnamon, cloves, coriander, brown mustard seeds, bay leaf, etc.) put in a sachet bag and tied off to pot handle

½ tsp. Pepper flakes

1 Tbsp. Ginger, fresh, grated fine

1 ea. Cayenne pepper, small, seeds and all!

Method:

Combine all ingredients in a heavy kettle; bring to a boil. Reduce the heat and cook for about one hour, until thickened.

Makes about three pints of green tomato chutney.
